Renowned art collector and professional gambler David Walsh revamped Moorilla when he took over the downtrodden winery in Hobart, Tasmania, in 1995. In a scallope-edged wood-and-glass building designed by the famed Melbourne architect Nonda Katsalidis, you can take master classes in pairing Moorilla’s fruity Praxis and the more refined Muse, which attracts collectors. (Moorilla also produces beer under the Moo Brew label.) Nearby, the stunning $75 million Museum of Old and New Art, another Katsalidis creation, houses Australia’s largest private art collection.
